Massimo Marino is a Sicilian chef with over twenty years’ experience having managed renowned restaurants in Malta, Sicily, Bahrain and Abu Dhabi. Massimo cooks the majority of his dishes on demand and he strongly believes that fresh ingredients need to be cooked gently in order to maintain their original taste and texture. Finding fresh and high quality products to meet his expectations is a task he and his team happily do every day to maintain the high level of quality in the dishes prepared daily. Some of the dishes on the menu are cooked in advance due to their cooking process such as braised pork cheeks or the slow cooked octopus. Massimo explains his technique quite simply.
“Working the dish for me is a well-balanced combination of elements, flavours, colours using the best food techniques, freshest ingredients with an element of creativity and the result will be a simple but a tasty and elegant dish creation.” says Massimo
Massimo’s cooking style is a twist between modern and contemporary Mediterranean cuisine because he adopts the latest cooking trends combined with the local fresh ingredients. The a La Carte Menu at Panorama is changed every 100 days and this is accompanied by a Speciality Menu that changes frequently.
